During the workshop Mac will walk you through the process of making miso. A comprehensive step-by-step demonstration will cover all the elements of making fermented bean paste with [barley/wheat] koji and [lupin/chickpeas] sourced from local producers. Each participant will have a chance to make their own jar of miso (approx. 1kg) to take home.

During the workshop Mac [Mac.Ferments from Kopenhagen] will walk you through the process of making miso. A comprehensive step-by-step demonstration will cover all the elements of making fermented bean paste with [barley/wheat] koji and [lupin/chickpeas] sourced from local producers. The workshop is also a chance to taste final products from Mac’s manufacture in Denmark. Participants will gain knowledge about the role of enzymes, bacteria and yeast in solid state fermentation. Each participant will have a chance to make their own jar of miso (approx. 1kg) to take home. Finally, the workshop will be a great opportunity to get answers to troubleshooting and more insights from Mac’s approach towards miso production.
